Growing beansprouts from mung beans

As part of the Chinese New Year celebration we grow beansprouts.  They are relatively easy and quick to grow.

You will need:

Mung beans
Cloth (a net curtain piece is ideal)
Transparent container
Elastic band
Colander/sieve

Rinse the beans under running  water.  Place the beans in the bottom of the container.  Cover with 1 to 2 inches of water.  Cover the container with net  material and secure to the top of the container with an elastic band.  Let the beans soak for 12 hours or overnight.

After the initial soak, drain the beans. Cover them with water once again, swirl them around in the container and then drain the beans. After rinsing and draining, prop the container up so that it tilts with the opening downward. This allows all the water to drain and helps prevent mould growth.

Continue to rinse and drain daily, until you have a sprout growth of 1 to 2 inches. This can take 3 to 5 days.
